Candied Maple Nuts!


These are by far my BEST raw recipe yet! They turned out so good and sweet! I struggle with a sweet tooth, so Im sure these will be helpful on those tougher days :-)
Candied Maple Nuts
2 cups nuts, soaked 6-8 hours, rained and rinsed
1/4 C. raw agave nectar
1 1/2 t. cinnamon
1 t. maple extract
1.4 t. Himalayan salt

(note: I couldnt find maple extract, so I used 1 T. malassas and 1 t. vanilla extract, then reduced the agave nectar by 1 T. Next time I think I will add a bit more agave to create a bit more syrup!)

Onion Rings with Ranch Dressing!


Im back at it, going to try this Raw thing again! I really do desire to succeed at this! The onion rings and ranch turned out better then I expected! (keeping in mind that I have a long ways to go in retraining my taste buds!)
Ranch Recipe
*"Fried" Onion Rings

1 large sweet or spanish onion cut into rings

1st coating
4 tbs. olive oil
2 tbs. water
Sea salt to taste

2nd coating:
1 cup ground golden flax seeds
1/2 cup ground unsoaked almonds
1-2 tsp. paprika
Sea salt and pepper to season

How to: Take each onion ring, dip it into the 2nd coating, then into the 1st coating and then back into the 2nd coating. Your goal is to get as much of the 2nd coating as possible. Once you have achieved that, gently take the the coated onion rings and put them on dehydrator trays (without teflex sheets) and dehydrate the rings for about 10-14 hrs at 105 degrees F. or until crispy.

My Main Meals.....

Ive tried a few new recipes, some have worked....many havent. For the most part, this is what I eat. Super yummy dressed up salads, and fresh Juice! I want to add more variety, so I dont get bored, but these have been great. I have some books I ordered off Amazon that should arrive in a few days, cant wait!

Salad with fresh raw okra, zuchini, grapes, cucumbers, flax seeds and dressing.

Shake was frozen strawberries, mango, black berries, ice, hand full of organic spinach, half cup of soy milk. I usually add an orange also.

Lettace Wrap Dinner

Tonight I made lettace wraps with two kinds of lettace, avacado, tomato, cucumbers, green onion and a dash of salt, Yum! They were good, filling and refreshing.

Farmers Market Loot!

Our local farmers market has a "Sale Table" in the back. I did good today! Hope we eat it all before it goes bad! The avacados were actually bad, so really, those can be taken out. But my total cost was $17.02!!

Need a sweet!!

Day three of going raw, and I need a sweet! I mixed some coconut oil with carob and flax seeds. It turned out too sweet, and the flavor was odd and strong... But, I love how the light in the photo turned out :-)
